BIFTEKIA STO FOURNO | Greek Baked Meatballs with Lemon Potatoes

Biftekia mixture
- 800 g Beef mince
- 1 onion grated
- 2-3 cloves garlic chopped
- 1/2 cup parsley chopped fine
- 1/2 cup mint chopped fine
- ¼ cup bread crumbs
- 1 egg
- 2 tbsp extra virgin olive oil
- 1 tsp dried oregano
- Salt and pepper
Potatoes
- 5-6 potatoes peeled and cut into wedges
- 2 cloves garlic grated
- 2-3 lemons juiced
- 1 tsp dried oregano
- 1/4 cup Extra virgin olive oil
- 1/2 cup water
- Salt and pepper
- Extra lemon for later
- Olive oil for later
Instructions
- Preheat oven to 180 degrees Celsius fan forced. Combine all potato ingredients into a baking tray. Cover tightly with foil and bake for approximately 30 minutes or until potatoes have softened.
- In a bowl, add all ingredients to make the Biftekia. Mix well by hand (if you feel the mixture is not holding, keep working it with your hands; it will come together). Form 2 Tbsp of mince mixture in your hands into oval shapes. Set aside.
- Once the potatoes have softened, allow them to cool until they’re warm enough to handle. Arrange the biftekia in the tray with the potatoes (you may need to move the potatoes around in order to fit the Biftekia).
- Squeeze some extra lemon, drizzle extra olive oil and return to the oven uncovered for approximately 20- 25 minutes until biftekia have cooked through.
