Mosaiko: The Ultimate Greek No-Bake Cake That’s Perfect for Any Occasion
If you're looking for a dessert that's both indulgent and easy to make, look no further than Mosaiko, a beloved Greek no-bake cake. This dessert is the ultimate crowd-pleaser, combining the rich flavours of chocolate, biscuits, cognac or brandy, and butter, all layered together to create a visually stunning and incredibly satisfying treat. The best part? It’s a no-bake recipe, making it a perfect choice for any occasion when you don’t want to turn on the oven but still want to serve something decadent.
Mosaiko (pronounced mo-SAI-ko) is essentially the Greek version of a chocolate log or a refrigerator cake, where a mixture of crushed biscuits (cookies), cocoa, and butter is bound together and chilled to set. It’s the perfect combination of simplicity, convenience, and flavour, with a delightful texture that’s both chewy and crisp. Whether you're preparing it for a festive gathering or just craving something sweet at the end of a meal, Mosaiko delivers every time.

What is Mosaiko?
Mosaiko translates to "mosaic" in Greek, a fitting name for this dessert because of its striking visual appearance once it’s sliced. When you cut into the chilled cake, the crushed biscuits, cocoa, and chocolate are scattered throughout like little tiles in a mosaic pattern, creating a beautiful, rustic effect.
Traditionally, Mosaiko is made with biscuits (cookies) like Petit Beurre or digestive biscuits, but many variations exist. You can even add chopped nuts, or raisins for extra texture and flavor. The base of the cake is usually made from butter, cocoa, chocolate melts, and condensed milk. Once the mixture is set in a loaf pan or rolled into a log, it's chilled in the refrigerator to firm up, creating a sweet, chocolatey treat with a soft yet satisfying crunch.
This dessert is particularly popular in Greece during the holidays, family gatherings, and birthday celebrations, but it’s also enjoyed year-round as a quick and delicious fix for a chocolate craving.
